Highland Single Malt 2005 #21

Following the success and feedback of our first collaboration with the Toronto Whisky Society, we were keen to seek out another bottling for the group to enjoy. We were lucky enough to secure this cask from a secret distillery in the Highlands, distilled in 2005. The Toronto Whisky Society, in their own words, had this to say: “This peated Highland - the third of our ‘Secret’ series of bottlings - was patiently aged 20 years in a hogshead, imparting well-balanced peat, cereal, floral, fruity, maritime and candy notes. It reminds us of a quintessential Canadian experience: sitting in the Toronto waterfront Muskoka chairs, where the brisk changing of the seasons is balanced by the warm company of friends and good whisky.”

This was a fantastic selection and, while we can’t confirm the cask’s origins, the peated aspect limits the possibilities. We have our suspicions, but we’ll leave it to you to debate once you’ve had a chance to try!

This single malt scotch whisky is non-chill filtered and naturally coloured, yielding 90 bottles at a cask strength of 54.2% ABV.
