We make our rum using Caribbean molasses, fermented on-site for 7 days followed by two subsequent distillations resulting in a rum spirit at around 75% ABV. Ageing in ex-Whisky casks smooths out the spirit, adding notes of butterscotch, oak, toffee, and caramel to the fruit-forward spirit.
