Tasting Notes:

Nose: Buttery pastry, peach, and pineapple.

Palate: Stone fruit, croissant, and tropical fruit with a pleasant, waxy mouthfeel.

Finish: alcohol dissipates quickly, leaving a cereal sweetness 

Distiller's Notes:

"With notes of tropical fruit, tinned peaches, and pineapple; a full-bodied texture; and a croissant sweetness, our New Make Spirit is delicious before it even touches the wood."

Mashbill: heritage grain, Maris Otter and Norwegian brewer's yeast, Kveik

Fermentation: 7 days in wooden washbacks; no temperature control

Wash Distillation: 2000L Copper Pot still; 6 hour distillation

Spirit Distillation: 1000L Copper Pot still; 8 hour distillation; cuts made by taste. 

ABV: cask strength; 65% ABV
