As Distillery Manager, Heather takes advantage of one really big perk of the job: it’s a dog-friendly office. Her now 10-year-old English Bulldog, Maisie, joins her nearly every day at the Distillery.
 
Our Lighthouse Series: The Keepers’ Collection was created to provide our team with the unique opportunity to create their own spirits from concept to fruition.
 
In this third edition of the series, Heather wanted to combine a few things near and dear to her: coffee, rum, and Canada. This is a rum distilled with spices and botanicals, infused with True North coffee beans from Glen Lyon Coffee Roasters, and sweetened with maple syrup.
 
Heather’s Tasting Notes:
Nose: sunny Sunday morning
Palate: coffee ice cream drizzled with maple syrup
Finish: cozy cuddles with Maisie

Maple syrup, lactose, cacao, vanilla, coffee beans.
 
Summary:
A 27% ABV rum-based coffee liqueur sweetened with Canadian Maple Syrup. Chocolate and coffee combine with cinnamon to create the perfect addition to espresso martinis, coffee negronis, irish coffees, or affogatos.
