New Yarmouth distillery is located in Clarendon Parish and its spirit epitomizes the unique characteristics of Jamaican rums, in the same vein as Monymusk, Clarendon and Long Pond. The long fermentations, yeast selection and resulting esters create a fruity, bold and punchy spirit that is rich with flavour, although historically its stock has been used as a component in different blends. As a result, you can imagine how excited we were to come across this aged New Yarmouth.
This 16-year-old New Yarmouth was distilled in 2009 and moved from Jamaica to Europe in 2012 to mature in a once used bourbon barrel. As soon as we received a sample of this delicious rum we jumped at the opportunity to bottle it.
The label is the photo that inspired our Stargazing series, the “Return to the Veil Nebula” from NASA’s Hubble Space Telescope. Hubble’s voyage is something we have followed since we were young and we feel lucky for the opportunity to see the wider universe through that journey. The Veil Nebula, about 2,400 light years away, is a cloud of heated and ionized gas and dust in the constellation Cygnus. It constitutes the visible portions of the Cygnus Loop, a supernova remnant, many portions of which have acquired their own individual names and catalogue identifiers. The source supernova was a star 20 times more massive than the Sun, which exploded between 10,000 and 20,000 years ago.
This single barrel rum is non-chill filtered with no additives, yielding 221 bottles at a cask strength of 59.8% ABV. |
